I just made some yummy Chocolate Cheese Chip cookies with it too!

I chopped up 1 1/2 Lily bars!

Chocolate Cheese Chip Cookies

1/2 cup Butter

1/2 cup Cream Cheese

1/2 cup swerve

1/2 cup xylitol with 1 tsp black strap molasses mixed in(or just throw both in bowl)

3 eggs

1 tsp vanilla

1 tsp baking soda

1 tsp Apple Cider Vinegar

2 cups Baking Blend

1.5 bars of on plan Chocolate chopped into chips

Cream butter and sweeteners, add eggs and cream together. Add remaining ingredients and mix well. Stir in chocolate. I used cookie scoop and bake at 350 on parchment lined pan for 10 minutes. Let set for 10 minutes or so..if you can before eating. Cookies are soft!

Food freedom…finally.

Last night, we went to our local Mexican restaurant. The thing I love most about the Trim Healthy Mama way of life, is the freedom. You can go just about anywhere out to eat, and still stay on plan or pretty darn close. About the only one I haven’t quite mastered is Chinese because frankly, there is lots of frying and corn starch involved and rice..and noodles..lol. But, that being said, again, there is freedom in knowing I can use that as a treat and 3 hours later..pick right back up where I left off!

Back to the Mexican restaurant. I ordered a chimichanga…carnitas for the filling, no rice, extra lettuce. Yes, a chimichanga is fried in a tortilla, but I just decided that since it was the special and I am cheap, I would eat the filling out of the middle! And I did! I didn’t stay completely on plan, because let’s just say the chips and salsa and ranch at Hacienda is amazing, so I had a few chips…the ranch and salsa WERE on plan in this delicious S=Satisfying meal! And you know what? I didn’t feel an ounce of guilt or shame. That, my friends, is what we call an NSV NON scale Victory!

Trim Healthy Mimi

I finally received my Trim Healthy Mama Baking Blend and oh …my…goodness! Let me start by saying that this “flour” is superfood goodness all while being gluten free, low carb, fiber rich and …yes..it has collagen peptides which are amazing for the body!! *insert squeal here!

If you have ever tried to watch your carbs, then you fully understand the desire for anything bread or biscuit like! It becomes a bit of an obsession. So, I decided to put it to the test and see if this would deliver! and baby, it did!

Garlic Cheddar Baked Biscuits(S)
1/3 cup plus 1 T THM Baking Blend
1 tsp. Aluminum Free Baking Powder
good pinch of Celtic Sea Salt
1/4 tsp garlic powder
1/3 cup parmesan cheese
2 T Sour Cream
2 T Heavy Cream
1 egg
2 T softened butter
Handful of Shredded Cheddar 1/3 cup or so

Stir together dry ingredients to break up any lumps. Add the sour cream, heavy cream, egg and softened butter. Blend with wooden spoon until fully combined. Fold in cheddar cheese. Using a medium scoop, place 6 even scoops on parchment papered cookie tin.

Bake for 15-17 minutes at 350.

Now for the sausage gravy..this is pretty much a no brainer. I browned my sausage, I used one pound of Bob Evan’s Natural Sausage with a small roasted red pepper. Seasoned with a half tsp of marjoram. Drain. Add in a tablespoon of butter and stir til melted. Stir in 2 T of THM Baking Blend until thickened. If necessary you may add a little extra gluccomanan to thicken as desired!

Lord have mercy, this met all my expectations! So, whoever told you that you have to eat taste less food to lose weight…well..not the Trim Healthy Mama way!

Eat Yourself Skinny

I.  Love.  Cookie Dough.  I could eat an entire batch of raw dough.  Well, pre-THM I would.  Not anymore.  But I do still crave that flavor from time to time.  So, I decided to try to make a shake that had those same comforting flavors.  I tried several versions of this shake before I finally ended up with a flavor that I felt really did taste as close to cookie dough as a shake could get.  I also wanted to keep this an FP drink so I could enjoy it anytime of the day.  I am happy with the results and I think you will too!

Start by adding 1/2 cup low fat or fat free cottage cheese to your blender along with 1/2 cup almond milk.

Rants...Revelations...and recipes...

Got this recipe from http://www.agirlworthsaving.net/2013/03/paleo-cinnamon-square-crunch-cereal.html. Only difference I made was that instead of using another piece of parchment on top(actually I did, but everything stuck to it, so I ditched it and improvised) by spreading it really thin, then baking it for 10 minutes. I pulled it out of the oven and then used my small rubber rolling pin to flatten it out evenly and then cut it into squares and then baked the last 10-15 minutes! Oh my word, this is soooo tasty!

2013-05-01 13.03.59 Blend in food processor or vitamix, 1 cup unsweetened coconut, 1/2 cup raw sunflower seeds, 1/4 cup chia seeds, 1 Tablespoon cinnamon, 1/4 tsp celtic sea salt. This will make a flour like substance.

Add 1/4 cup pure maple syrup and an egg. Stir.

YOwZa! Just made the Shrinker from Trim Healthy Mama

BADABING! After scouring the internet the other day, I fell upon so many posts about Trim Healthy Mama! My friend, who I am doing a weight loss challenge with asked me about it last week and..being the researcher that I am…and cheapskate, I found that our library had a copy of their book! Before I dashed off to pick it up, I googled Trim Healthy Mama and Pinterest searched Trim Healthy Mama and YouTube searched THM…#theinternetlovesme. Their youtube videos cracked me up! One of them is of the two of them, Serene and Pearl..sisters..making a drink called the Shrinker…I AM IN!

1. Boil enough water to fill a large coffee mug in which you will steep 4 tea bags of Oolong. Let it cool.

2. Once cooled, pour this tea into a blender along with ½ cup of Unsweetened Almond milk, a couple of generous pinches of Celtic salt, a generous tsp. or two of vanilla, stevia extract to taste (go easy and add more if needed), ½ – 1 tsp. of cinnamon (cinnamon lovers can use more) and cayenne pepper( used 1/4 tsp) to taste. If you have not developed a taste for hot pepper then use black pepper to replace the red for your chai blend. Turn on blender and blend well. This is your SHRINKER concentrate.

3. Once blended, pour the concentrate into a glass 2 quart size canning jar and fill to the top with ice. If you don’t have a 2 quarter, I recommend you get one as it is fun having your day’s quota (2 quarts of deliciousness) in one huge jar. But you can split your concentrate between two quart size canning jars. You can add a bit of water to the concentrate if needed to make the liquid reach the top of the jar, but do make sure there is plenty of ice to keep the SHRINKER thoroughly chilled.

4. Put a lid on the jar, shake well then taste and adjust flavors.

OMG..seriously, I love the taste but am such a wimp when it comes to heat! BUT that being said, if this bad boy will shrink my fat, I am so totally ready to suck it up and deal!

I also didn’t add stevia..I used 1 tsp of coconut sugar. I don’t have stevia..I actually hate stevia..but again..I might just have to get over that too.

Taste buds are singing!♫♫♪♫♫ actually ZINGING! but..I think the Shrinker and I are going to be regular friends!!

There are so many things about this drink to love!! Cinnamon is known to help regulate your blood sugars, Cayenne is a metabolism booster, Oolong tea helps burn calories and who doesn’t want to do that! Drink up friends! I think tomorrow I might try adding a scoop of my Juice Plus Vanilla complete..and the next day..Coco it up with my Slim and Sassy Chocolate protein…yeah baby!

My next thing is to try their not naughty noodles! zero carbs zero calories…smh..this is fabulous!
